The water sits in the cavity between the outer and inner walls of the kettle, while the flame draws upward through the central chimney. This chimney effect creates a natural updraft that accelerates combustion and transfers the entire heat of the fire to the large contact area between flame and water. It all started with Patrick Kelly, a fisherman and small farmer on Lough Conn. During a harsh winter he tinkered in his workshop with a tin kettle that was later replaced by more durable copper.
